Can Power Steering be made to stay on?

I simply don't like the power steering cut out at about 40-50 mph and wonder if it can be made to stay on?

The reason is, I'm an elderly person with limited strength in my arms and find it tiring on curvy roads.
Being a conservative driver, I think it would be easier for me to have PS full time.

Does anyone know if/how the cut out can be defeated?

It will almost certainly be governed through the CAN BUS but the problem is if you cut the CAN wire it will either stay off or the car won't start.

Evilution: thanks for meaningful feedback. I was hoping for some simple solution, like perhaps an "on/off" switch. Obviously thats not possible.
