Oh MAN! That would have to SUCK! I am pretty anal about planning, so that hasn't happened to me.... yet.
I just put a German Hefe Weizen in the fermenter Sunday afternoon. The little yeasties were busy as they could be by bedtime. whoohoo! 9 lbs of wheat DME and 1lb of light DME should get me up to about 9% ABV. Bet my German friends won't tell me my beer is "a little watery" next time!
