I think the charcoal will help. The manual states that it has an activated charcoal filter, so if your car came with a different one, it may have the wrong one on delivery and the new ones appear to be doing much better.
Still, any filter will capture whatever it gets thrown at it - this one's simply capturing outside/inside air. If you're getting mold on a filter, then you may have a problem somewhere else, a buildup of moisture that allows mold to thrive. Changing the filter is necessary if you find mold, but it doesn't address the root problem.
Just for curiosity, check your battery compartment. There is a rare situation where the AC drain line can drip into the battery compartment; that would certainly contribute to a mold problem. I've also read some mentions of the AC coils retaining condensation, and you might get your dealer to check it free as a precaution.
It the car's ok, maybe you live in a very humid state in a mold-prone area, keep the windows up and let the car feed the mold with steam. Air flow from open windows would help in that situation.
