Also, don't set it to recirculate. I don't understand why... but after a minute on recirculate the air coming from the vents gets damp, this makes the windows fog up really quick. Haven't figured out why this happens.

Just realized the problem with this explanation - if the engine is cold the thermostat should be closed and no water circulating from the engine to the radiator. As suggested maybe worth having the thrmostat checked incase MB engineered some trick electronic thingy which doesn't work

Because instead of drawing in any fresh outside air, you're recirculating the cabin air, which includes all the expelled CO2 and water vapor from your breath.

Recirculating's okay for A/C in the summer, but not such a good idea for defrosting/defogging in the winter.

That is what I had originally thought.. but it goes from being fine, to sauna in a matter of seconds. It's almost like I poured a pucket of water onto the heater coil. Flipping a switch fast. Sometimes it takes a minute or two longer to happen... but it goes from fine and dry inside to rainforest in about 3-5 seconds. I have considered taking it to have it looked at at the dealer but haven't had time yet.

Definitely sounds like a "dealer" trip to me

It's MORE than just the "recirc"

Maybe the same mechanism that caused some cabin air filters to grow mold... from excess moisture during the summer.

Someone had suggested closing the vents by activating recirc just before shutdown. Maybe that will help?

From my experience, that's definitely not normal. If I put recirculation on BEFORE the car has warmed up I get fogging (but definitely no sauna or rainforest.) AFTER the car warms up a bit, I hit recirculation to warm up the cabin faster. It does warm up faster and, I think, more evenly, and the windows don't fog.
