The earth from the light stalk goes straight to ground so that has to have live switching. The earth from the headlights go straight to a ground point so again, the positive is switched.
Sounds pretty simple, find something that goes on with the key, set up a relay and connect the headlamps to it.
The fun with diodes and resistors would start if you want to reduce voltage for daytime but bulbs are cheap and EZ to replace, figure a pair a year at 12V.
