Ok, I'm sure this is user error, but I will be coming to a stop, at first coasting and down shifting to slow, then softly applying the breaks. Sometimes, the light turns green and the car in front continues, at which point I accelerate cautiously. By this time I am in low 2nd (by the speed I am accelerating and tach) but the car acts like it wants to die, shutters, then shifts into 1st. By this time my foot is hovering so as not to rev the engine. It shifts, then I accelerate. The moment after my foot touches the pedal, it revs a bit and wants 2nd.

I think your car is the '09, but I don't think it makes a difference. Suffice to say that your car is going to do a LOT of weird, strange stuff for the first 800-1200 miles! :>) After that, it'll smooth out considerably! Don't get real concerned early on, though! I "bunny hopped" through many drive throughs when I first got my car, and that was pretty weird. Sometimes, I think the hamsters/algorithms, etc. have already decided, based on decreasing speed, etc. that a "downshift" is called for, and you're right at that critical juncture from decelerating to accelerating, and it's gonna drop no matter what! :>) Again, it should get a lot better with more miles! Not sure how many miles you have yet!

I have about 1300 on the 09 right now, but my gas miliage is still improving so this might too.
This used to happen to me, and once at an uphill junction, I was just about to stop and saw that I could go and stuck my foot down and the car stuttered, shuddered, then stalled and the dreaded 3 bars came up on the dash, and I thought Oh no, but switched off and restarted and all was good, but it scared me, and yes you can stall a smart.
So now I change down into first before a junction or stop light and it takes away all that, will it change down and shudder thing as it already is in first and I have had no problems since.
I always drive in manual, but the car sometimes takes over and does strange things and it is our job to find all the quirks and get round them, and that is why it is the most enjoyable car to drive well, as it takes skill and experience.

I like that answer! I think I would have laughed if it had stalled! Bringing me back to when my girlfriend with the flu was teaching me how to drive a manual...
So I just need to make sure I out smart the smart?
I have been dring non stop with padels only. Been using the 2500 rule for me. If I drop below 2500, I downshift a gear and keep it up around 3k. Never had a problem yet. I have the come to a light thing, it turns green, car still in 3rd gear but need to be in say 2nd or even 1st. I just down shift. As long as you not down shift and find your self downing so that the RPM shoots to 4 or 5k I think you be ok. It is a 3 cylinder, so keeping it up above 2500 and below 3k for normal driving is ok. I sometimes don't up shift until about 4500. But I am shifting on sound and feel more then RPM.
