is there any way to see what plates are taken before you go to the dealer?

In Texas, apparently you can. Click on this link and follow the bouncing ball.

Yes, most states allow you to try a name online. Search your states DMV website. I've even heard a few may even allow you to reserve or purchase the plate even before you have the car!

As long as you have the vin # you can reserve it. Vanity plates here are only $30.

more specifically, in Texas you can enter your desired plate on that site, and it will tell you if it is available. I have ordered 2 plates online; works well! And you don't need a VIN.

You can search, but to reserve you have to have a vin # here.

Reserve the name, then when you get the car, buy. That's how it works in NE.....

In Texas it appears you do have to go ahead and buy the plate to hold the name. I know that is the way it worked a week ago when I did.
