Has anyone separated the fabric covered inner door panel from the surrounding plastic inner panel in order to recover it with new/different fabric? The panels are attached by melted rivets of some sort so I'm not sure how to separate them or if I could successfully reattach it

The rivets are most likely posts that stick through and are then melted in place. Typical mass production, with no thought to servicing. Depending on the size of the post body, you might be able to tap them and use small screws and washers. To remove, try a soldering iron on low heat to soften the melted heads. That will minimize the risk of breaking of the posts at their base when you pull the panels apart. Do it in a ventilated area.
