Can you elaborate on what was involved with the installation? Any reprogramming needed? :)
I pulled the negative battery cable let it sit for 10 minutes and followed what this guy did in this Youtube video. On the US model the battery is in the passengers side foot well under the carpet and under the foam that has the tire compressor and tow hook.

T40 Torx is what I used to remove the bottom screw it was tight.. real tight but I managed to get it free.

I will definitely need to reprogram to get the paddles to function and to get more power. I'm hoping to get some help with this part of it or at least a solid step by step procedure.

The additional issue if you exchange the whole steering wheel is the need of recalibrating the steering wheel angle sensor.
In parallel you need to code the N127 and KI451.
You need DAS/Xentry for sensor and most easy vediamo to activate the paddles, but may e also DAS will be enough with extended feature normal not available in original MB service. They do it via SCN coding.

Are you interested in doing the work?

So only to code the ki451 and cepc. Best and fast with vediamo and or Star diagnostic. Elm327 is a real challenge are there are several failure afterwards in other ECUs which need just to be cleared if you do it online in the car.
You should have some cheap J2534 usb device like openport or mvci

I found someone to help me through setting up the multiplexor and software. Now i just need to decide on what is the best way to get a C4 multiplexor. Looking at a few on Aliexpress.

Ok which software you talking?
Multiplexer C4 with DOIP is the best, but also most expensive way to do this.
The J2534 OBD adapter solution is only working with Xentry Passthru (ok it runs also with the full version with some knowledge) and Vediamo 4.2.2.
The chinese SD C4 multiplexers will run also with Vediamo 5.x and the Xentry/Das versions.

A nice solution is to take this all into a docker or Virtual Machine. By this you easily can use this without overload you working environment:) Also you can use it via Teamviewer remote without allowing the system accessing the internet.

I ended up building a Virtual Machine to run the software for the Multiplexor. Paddles now working also deactivated rampage. Using D+ with no rampage feels much more like an EV should IMO. Thank you for all the help from what I read on this forum and the people in my post.
